I enjoy baking. I enjoy eating it even more. So when you try to eat clean about 75-80 percent of the time so that you do not have to eat clean the other 25 percent of the time (that’s my favorite time by the way)- you gotta make those treats count 🙂 Plus if I baked all the  time I would eat it all of the time, like all 24 cupcakes in the span of a weekend. So I have to limit my baking to one or two days a week.

This week I made up my own concoction & called it Pina Colada Cupcakes. Cause that’s what I do – I follow the recipe to a certain extent and then I improvise. I live recklessly like that.

First I mixed a box of Pineapple Supreme cake mix with a 16 oz can of crush pineapple (I drained just a little off the top but left most of the juice), added some coconut flakes and baked it according to the box. I did not add in the eggs, oil, water like the cake mix called for- that’s what the crushed pineapple and all it’s juice was for. I topped it off with buttercream icing with some coconut and crushed pineapple added in it for flavor (buttercream icing courtesy of the canned stuff because I was too lazy to make it from scratch. I did add about 2 teaspoons of powdered sugar to thicken it up) and Viola! They were a little sticky (I’m guessing from the pineapple) but soooooo yummy.
